Information
The Village met with Ms. Sandra Ajzenberg and partner Ms. Krystyna Bankowska in January of
2026 regarding their request for a Class "F-3" liquor license for Gilded Fork set to open at
1716 E Kensington Rd. (former Chit Chaat Cafe). The Class ""F-3" license provides for the full
service of alcohol in a restaurant with lounge.
Gilded Fork aims to be a European -inspired fine dining establishment with a vision of
combining classic European culinary traditions with modern American influences. The
restaurant's vision is to deliver chef -driven cuisine in an elegant, welcoming environment that
serves all its guests. After living in the United States for 10+ years and gaining experience in
the restaurant and serving industry in Warsaw, Poland, Ms. Ajzenberg and Ms. Bankowska
explained that their goal is to make the American dream come true by providing the
community with "what is missing" from the European dining scene. The restaurant will feature
a Head Chef from Poland, with Michelin -level experience. The menu will consist of cold dishes,
hot dishes, salads, brioches, soups, and seasonal favorites. Gilded Fork's beverage menu will
provide an authentic European take on cocktails, exclusively with fresh fruit.
Gilded Fork's tentative operating hours will be from 12:00 p.m. to 10:00 p.m. Wednesday,
Thursday, & Sunday with extended hours until 12:00 p.m. on Fridays & Saturdays, closing on
Mondays and Tuesdays. Ms. Ajzenberg and Ms. Bankowska will be managing the
establishment and have completed classroom Bassett certification. Both understand all
individuals involved with the sale and service of alcohol must complete a certified liquor server
training course. A completed application along with fees and required documents have been
submitted. A February opening is anticipated.

Alternatives
1. Approve an ordinance increasing the number of Class T-Y liquor licenses.
2. Action at the discretion of the Village Board.
Staff Recommendation
Staff recommends approval of an ordinance creating a new Class "F-3" license and welcomes
Gilded Fork to Mount Prospect.

AN ORDINANCE AMENDING CHAPTER 13 OF THE
VILLAGE CODE OF MOUNT PROSPECT
BE IT ORDAINED BY THE MAYOR AND BOARD OF TRUSTEES OF THE VILLAGE OF MOUNT
PROSPECT, COOK COUNTY, ILLINOIS ACTING IN THE EXERCISE OF THEIR HOME RULE POWERS:
SECTION ONE: That in accordance with Subsection A of Section 13.108 of Chapter 13 of the Village Code
of Mount Prospect, as amended, the Corporate Authorities shall determine the number of Liquor Licenses
available in each Classification and shall establish a list specifying the number of Liquor Licenses
authorized. Said list is hereby amended. This Ordinance will increase the number of Class "F-3" licenses
by (1) Gilded Fork LLC d/b/a Gilded Fork located ; Said list
