JURACEKAND BOARD OF TRUSTEES FROM:DOREEN JAROSZ ADMINISTRATIVE ASSISTANT TO THE VILLAGE MANAGER DATE:MAY 26, 2015 SUBJECT:SMOKEY BONES BAR & FIRE GRILL 164RANDHURST VILLAGE DRIVE REQUEST FOR CLASS “F3” LIQUOR LICENSE On Thursday, May 212015, ActingVillage Managerand Administrative Assistant to the Village Managermet withSmokey Bones Bar & Fire Grill PresidentChrisArtinian, regarding a request for the creation of a new Class “F3” liquor license at their newly constructed Randhurst Village location near the AMC Theater. Director of Operations Brian Keith, General Manager Christy Pruett and Attorney Harlan Powell were also present. The Class “F-3” license provides for the full service of alcohol in a restaurant with lounge. Chris Artinian is a long-standing restaurant industry executive and former CEO of Morton’s The Steakhouse. He was hired in 2012 by Barbeque Integrated Inc. to refresh the Smokey Bones brand as its president and CEO.Smokey Bones currently operates 65 locations in 16 states and employs nearly 3,700 people. The new Randhurst location will be their second location in Illinois. The total building square footage is 6,600 square feet with an estimated 60seats inside and an outdoor patio. The Randhurst Village locationwill be an entirely new design for the casual dining restaurant, featuring modernized interior elements and equipped for family meals, drinks with friends, or watching a sports game at the bar.The Smokey Bones American Grill menu showcases a variety of meats smoked in-house daily. The restaurant will be open seven days a week serving lunch and dinner. An early July opening is anticipated. Discussed at length were the Village’s particular sensitivity to the sale of alcohol to minors or clearly intoxicated persons. General Manager Christy Pruett stated Smokey Bones has an in house certified liquor servers training course and all wait staff will be Basset certified. It was made very clear to all present that the restaurant managers were responsible for the actions of all restaurant employees with regard to the service of alcohol. The requirements of the Village’s Fight Ordinance were also discussed A completed application as well as all other required documentation is on file. Mr. Artinian and Ms. Pruett have submitted to background checks and fingerprints in association with the Smokey Bonesliquor license. If the Village Board views this application favorably, an Ordinance creating a new Class “F3” License would need to be adopted.
